three ingredient shortbread cookies

Coffee and shortbread. The breakfast of dreamers.

Note, I didn't say champions. Champions eat eggs and green drinks (which I admittedly love) and oatmeal.

But dreamers...dreamers are a bit simpler. Something delicate and decadent is all we need to start the morning oh so wonderfully. A little coffee and a few of these cookies eaten on the back porch or in your favorite room in the house...mmm. Perfect start to a day.


And the best part? They take a total of 20 minutes to make and only three ingredients. That's including rolling time, cutting time, and baking time.

20 minutes to the perfect breakfast for us dreamers.



Three ingredient shortbread cookies:
  • 2 cups all purpose flour
  • 3/4 cups confectioner's sugar
  • 1 cup salted butter
Preheat oven to 350 Mix them all together at medium speed. Dough may not fully come together on its own. That's ok. Once it's thoroughly mixed, form it all into a ball. Roll out onto a floured surface to about 1/4 inch thick. Cut out with a cookie cutter of your choice. My favorite is my little ruffly biscuit cutter. Perfect for dipping. Anyway...bake for about 8-10 minutes, until golden around the edges. Eat immediately or keep around for a few days.

    1. A good shortbread can't be beat! This one is so easy you can seriously make it when you wake up, have it for breakfast, and still get to work on time. I do it frequently!

  3. I absolutely love that--breakfast of dreamers. I am definitely one of those people. I just want something a little bit sweet and decadent. It's the perfect compliment to a cup of coffee. Yum!
