This month, we are talking about using our homes for the Gospel, and our discussion question is...How do you use your table to make your guests feel safe?
I love eating around the table with friends. I love the discussions, the laughter, and the minutes that turn into hours as we sit around with food and wine and just be ourselves and deepen our friendships.
Something special occurs around the table. There is a sense of peace in sitting down with good food, the messy kind, the kind you don't have to set the table for or pair exactly the right wine with, or spend three hours getting just perfect.
I think the best moments, the moments where everyone can be perfectly themselves, relaxed, and happy, are when we aren't so worried about the end result of what we cooked, and are just thinking about being with our friends. That's my favorite way to make my guests safe and happy. I don't spend so much time thinking about the menu. If my home feels stiff, they will too.
I don't want my home to be stiff. I want it to be full of laughter and joy and memories. I would rather make memories than insanely time consuming gourmet food that has to be eaten so precisely. Don't get me wrong, I love the occasional gourmet dinner. I'm all about some amazing food. But mostly, I'm about the heart of the meal.
Mostly, I'm about how people feel about themselves when they're eating. I don't want them to feel uncomfortable or judged, so I won't make them stiff food. I'll make them something simple and delicious and fun, something that fosters relaxation and a good time.
Something like these fish tacos. They're the simplest thing I've ever made and they're wonderful. I'm not even going to give you precise measurements. This isn't about precision. It's about flavor and fun and that's what I want you to focus on when you make them for those you love. Pair them with the salsa Rachel shared for an appetizer and you've got a festive easy night around the table with the ones you love.
Easy fish tacos:
- 2-4 tilapia filets depending on how many you're feeding. They'll all be crumbled up so 1-2 per person is good.
- 1 container of fresh salsa--the kind you can get in the produce section of the grocery store.
- Flour tortillas
- Black beans, 1 can, heated up
- Mexican rice. I use a box kind from the ethnic food aisle.
- Cheese of your choice. We use cheddar and Monterey Jack combined.
- Cilantro lime sauce: juice of 2 limes, 1 cup(ish) of fresh chopped cilantro, about 1 cup of mayo (Dukes--this is the South--Dukes is what we use in the South), 1 cup of plain Greek yogurt, blend together. I use a Nutribullet for this--gave me a very smooth sauce.
Cook the tilapia filets in a skillet over medium heat in a little bit of the salsa. Once cooked, chop it up with a wooden spoon so it will be easy to put in tortillas. It doesn't need to be precise. Just chop it until it looks right to you. Spread the cilantro lime sauce in your tortillas. I like to warm mine up in the microwave first by placing a damp paper towel on top of them and heating for about 17 seconds. After the cilantro lime sauce, layer black beans, salsa, rice, fish, and cheese. Serve with rice on the side, or maybe a salad, or some corn. Whatever floats your boat.
They're so easy and so delicious. And I guarantee your night will be great eating them.
